Ingredients for Cumin-Crusted Lamb Recipe

  • 2 lamb racks, trimmed
  • 2 tablespoons ground cumin
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 shallots, peeled and halved
  • 500g new potatoes, scrubbed
  • 2 tablespoons butter
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the Lamb: Preheat your oven to 200°C (400°F). Season the lamb racks with salt, pepper, and ground cumin, ensuring they are well-coated.
  2. Sear the Lamb: In a large oven-proof skillet, heat olive oil over medium-high heat. Add the lamb and sear for 2-3 minutes on each side until browned.
  3. Roast: Add the halved shallots to the skillet around the lamb. Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare, or until the desired doneness is reached.
  4. Cook the Potatoes: While the lamb is roasting, boil the new potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  5. Crush the Potatoes: Add butter to the potatoes and gently crush them with a fork. Season with salt and pepper to taste.
  6. Serve: Once the lamb is done, let it rest for a few minutes before slicing. Serve slices of lamb with roasted shallots and crushed new potatoes. Garnish with fresh parsley.
